To tell you the truth, I first heard about Nitan Phuket just before I knew I had to go there. Because Phuket has so many restaurants to try that it seems irrelevant for me who live in Bangkok.
Nitan Phuket was part of our company outing trip. My boyfriend knows the owner who was an interior designer so she gave us some discounts. The restaurant is fresh, just opened before COVID-19 happened. Also, being an independent fine-dining restaurant in Phuket with no tourists is not easy. So we were happy that we can support her somehow.
It turned out that Nitan Phuket is way too underrated. For me who, thanks to my previous job, have tried so many fine-dining dishes, I have to say the food here is well planned and executed. It is also fit for Thais, since the flavors are still authentic with not too many weird stuff. The techniques are mostly Western, but the taste is definitely Thai. Except for the lamb which comes from nowhere. I guess that the chef might want to add some Western feel to the whole course.
For months, the restaurant has collaborated with many luxury resorts in Phuket but they haven’t received much feedback (because Phuket is literally empty now) but I think they will get more once tourism is back to normal. The chef Sariwat “Earth” Wanvichitkhun is already famous among Thais since he just won the TV show Iron Chef last week.
Right now the serve 5 or 8 course tasting menu. The menu is seasonal with lots of local ingredients. That is a good idea in this challenging time.
